Silk Road Restaurant (Amara Hotel Singapore)

Made my way down to Amara Hotel for my first Lou Hei!
Silk Road Restaurant was established in Nov 2001, featuring distinctive cuisines that are found along historical Silk Road of China, namely provinces of Sichuan, Shanxi, Liaoning and Beijing.

This year is a year of Pig, my year leh, heehee.... 
So, we had a cute piggy YuSheng auspiciously accompanied with 3 福.

Prosperity Eight Treasure Yu Sheng

Besides the usual shredded veg, the Yu Sheng came with a generous slices of abalone and salmon.  Jelly fish and fried fish skin were added for diversity of texture.  With salmon cavior and flying fish roe, the taste was brought as high as our tossing.  Mild spicy Sze Chuan dressing made this a very special Yu Sheng different from what I had tried.

Braised Pumpkin Soup with Superior Fish Maw
Fusion of western cream pumpkin soup with eastern ingredient.  The pumpkin soup was creamy but not too thick, surprisingly compliments succulent fish maw.

Soy Baked Sea Perch with Spinach & Bonito Flakes
Traditionally, it's either deep fried or steamed fish.  It was great to have a twist.  Baked fish wasn't as oily as deep fried yet more flavorful than steamed fish.  Sea Perch was soft and smooth, tasted almost like cod fish.  This was a crowd pleaser.

While I wished I could had the whole duck myself, it was skillfully sliced by the chef, wrapped in delicate batter skin with cucumber, spring onion shreds and sweet sauce.

Diced Chicken with Dried Chilli (辣子鸡)
The fragrance filled the room when this came.  This is a popular dish from Sichuan.  Deep fried chicken cubes stir fried with dried chilli and spices.  Really set fire on our tongues and yet it was addictive.  Enjoyed the burning "torture" very much lolxx...

We also tried ShanXi meat dumplings.  Very juicy and tasted very home cook.

Fragrance Rice with Chinese Sausage and Mushroom
Personally I liked this very much.  Most lotus leaf rice I tried were very dry, but this was soft, moist and not oily.  Worth the calories, I ate a bowl.
